Ingredients:

  • 1 cup (226 grams) unsalted butter, softened
  • 1 cup (200 grams) granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3 cups (375 grams) all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions:

  1. In a large mixing bowl, cream together the butter and sugar until light and fluffy.
  2. Beat in the egg and vanilla extract.
  3. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients and mix until well combined.
  4. Divide the dough in half and wrap each half in plastic wrap. Chill in the refrigerator for at least 1 hour or overnight.
  5. Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper.
  6. On a lightly floured surface, roll out one half of the dough to a thickness of about 1/4 inch. Use cookie cutters to cut out desired shapes and place them on the prepared baking sheet. Repeat with the remaining dough.
  7. Bake for 8-10 minutes, or until the edges are lightly golden. Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Optional: You can also decorate the cookies with icing or sprinkles after they have cooled. Enjoy!
